Kikunotsukasa Sake Brewery Co., Ltd. is located in Shizukuishi Town, which borders Morioka City and is surrounded by the beautiful peaks of Mount Iwate, Mount Komagatake, and other scenic mountains.

In the past, Shizukuishi Town was frequently visited by the renowned Japanese author Kenji Miyazawa. The landscapes that appeared in his works have been designated as one of the nationally recognized scenic sites of "Ihatov," a fictional utopia featured in his stories.

At our brewery, we draw subsoil water from Mount Iwate using a well, utilizing it as our brewing water. This water, naturally filtered and refined by the earth of Iwate, contains a balanced amount of minerals while maintaining the softness of soft water.

Brewing with soft water allows the natural flavor of rice to be fully expressed. By fermenting the sake slowly at low temperatures for over three weeks, we create a sake with a vivid aroma and a refined, well-defined taste.

Our sake is characterized by its vibrant fragrance and a rich, structured flavor. While it has a bright and elegant aroma, its taste remains firm and well-balanced, with sweetness, acidity, bitterness, and astringency all harmoniously integrated.

A vegetable connoisseur and a kimchi artisan with 40 years of experience started out with a shop of just 1 tsubo (1.5 square metres) and became very popular by word of mouth until there was a queue of customers at the Kawasaki speciality kimchi shop, Otsukimono Kei.
The kimchi, with its unique Japanese flavour, has evolved independently in Kawasaki's multicultural culinary culture and has been selected as one of the 'Kawasaki Specialties' and the '100 Best Products of Kanagawa', and is often featured on TV and in magazines.

What is the difference between Tofu and Koya-Tofu, and what is so special about Koya-Tofu?
Koya-Tofu is one kind of tofu, however it is produced by the additional processes, such as high-pressure pressing, slow-freezing, low-temperature aging, and drying. During those processes, the characteristics of tofu change greatly in physical properties and nutrition.
One big difference is that Koya-Tofu is dry. You may feel the process is simple and easy, but drying for tofu is actually not easy.
Because the structure of tofu is too dense for water to pass through, when you try to air dry regular tofu, you can only dry the outside. What gives tofu a structure change that can be dried inside is actually freezing process.
In general, the purpose of freezing for foods is for preserving freshness and maintaining the original condition as much as possible. In such cases, flash freezing is usually used. Frozen fish is one good example for that purpose. However, freezing Koya-tofu has different purpose. We do it to improve the product and get new features such as resistant protein and porous structure. Koya-tofu is frozen at -9°C for about 3 hours which is considered an unusually slow freezing process. By doing so, we can change its characteristics. Slow freezing generally results in larger ice crystals. It puts high pressure on the tissue so the regular protein will transform to Resistant Protein. Those large ice crystals also become voids after drying, when they evaporate as water. This makes the structure firm and spongy.
In Japan, we often put Koya-Tofu in delicious soup and let it absorb the soup, so when we eat it, we enjoy the delicious taste and its chewing mouth feel.
Moreover, thanks to its dry condition, it can be stored at a room temperature for 1 year, much more sustainable than regular Tofu. For that reason, the Japanese government recommends that each family stock koya-tofu as emergency food in times of disaster.
As the product is dried and hard, Koya-Tofu has higher easiness of handling and wider range of applicable dishes. We offer Koya Tofu as an ingredient in a variety of shapes, thicknesses, and textures. For example, the form of Koya Tofu Powder can be incorporated into daily diets, such as bread, snacks or meat replacement products as a healthy ingredient or as substitute. This ingredient will typically enhance the protein content of the end products.
A component called resistant protein (RP) increase during the process. As I already mentioned, Koya-Tofu is manufactured through the processes of high-pressure pressing, slow-freezing, low-temperature aging, and drying. These processes will strengthen the binding of soy protein, helping increase the resistant protein. Therefore, Koya-Tofu contains more resistant protein than native soy protein or regular tofu. Compared to most protein in our food, resistant protein is not digested in the intestines but in the colon. It is a kind of protein based dietary fiber.
Some Clinical studies show that Koya-tofu has the effect of significantly lowering LDL cholesterol and HbA1c. These effects will lower the risk of heart disease and diabetes. We believe that the rich amount of resistant protein contained in Koya-Tofu contributes to these effects.
Since Koya-Tofu is a Japanese food, until 2019, all of clinical studies are conducted on Japanese. To prove that European consumers will have the same effect, a clinical study was conducted with 45 person in Wageningen University. We also confirmed the positive result in reducing cholesterol, HbA1c, and blood pressure.
In fact, soy protein has been reported to have many health benefits, including lowering cholesterol. Because native soy also contains resistant protein.
However, its amount of resistant protein contents is very different from Koya-tofu. As I already mentioned, the Koya-tofu manufacturing process increases the amount of RP. Koya-Tofu protein has the highest amount of resistant protein among the soy products. It is not digested in the intestines but in the colon while maintaining its size. Resistant protein binds with bile acids, and then prevent its reabosorption to the body. This leads to various health functionalities, especially LDL and Hba1c reduction.
Furthermore, a significant reduction in blood pressure was also confirmed in the clinical study. We believe this effect is brought by the rich amount of potassium that is contained in our Koya-Tofu.

SASAKI SHUZO CO., LTD.

The brewery is located in the area known as "Rakuchu", which is within the Kyoto area of the Heian-kyo Capital, north of Nijo Castle, which is known for its great political upheaval. Although most people associate Fushimi with sake brewing in Kyoto, we are committed to brewing sake in Rakuchu. In 1893, when Sasaki Shuzo was founded, there were 131 breweries. At that time, the number of breweries and the amount of sake produced were greater in Rakuchu than in Fushimi.
Sake brewing flourished in Kyoto because the city was blessed with the Kyoto Sui-bon, or Kyoto Basin, a reservoir of high-quality water that was stored underground, and it is said that the capital was located in Kyoto for 1,000 years largely because of this exceptional topography and the abundance of water.
As the name of a place called "Demizu" remains near our company, Sasaki Sake Brewery has handed down the tradition of sake brewing in Rakuchu along with this water.
Sake is a wonderful heritage of the Japanese people. The use of rice, rice polishing, and koji to make various types of sake is a traditional technique that the Japanese people should be proud to share with the rest of the world.
Kyoto has been the capital of Japan for 1,200 years. Traditional crafts, dyeing and weaving, tea ceremony, Kyoto sweets, and Kyoto cuisine and sake have been handed down from generation to generation.

Starting with teas from our very own organic farm “Bio Farm”, we currently export Kagoshima’s premium teas to more than 15 countries. Our signature is Fukamushi Sencha (deep steamed green tea), for which Kagoshima is well-known, and Matcha (powdered green tea) which Kagoshima produces a large share in Japan today. We produce a great number of other teas in several grades, including regular Sencha (green tea), Bancha (coarse tea), Akibancha (autumn coarse tea), Houjicha (roasted green tea), Kukicha (stem tea), Genmaicha (green tea with roasted rice), and Black Tea.

Our offer is basically in bulk packs (1kg, 5kg, 10kg, 20kg) with designated labels upon request. We can also offer OEM packages with original designs, in any type of package such as a doy-pack, tin, box, and others. All the necessary documents for EPA, RCEP, FTA, Phytosanitary will be submitted prior to the shipment. We have multiple choices of shipping methods such as FedEx, DHL, UPS, EMS, air cargo, and vessel shipments, depending on the quantity and your lead time.

Our Miedore series is made from two types of citrus fruits grown in Mie Prefecture, Japan. The first is the Meyer lemon, known for its mellow acidity and subtle sweetness. The second is the yuzu, also grown in Mie Prefecture, which has a gentle acidity and light fragrance. When poured over salad, the fragrance spreads and the unique citrus aroma blends with the crisp texture of fresh vegetables, making the salad the main dish on the table.
