KUIKOKEBABU Co., Ltd.

We are a manufacturer of an all-purpose sauce called Eli Sauce in Okinawa Prefecture.
The company is headed by an Iranian couple, and the sauce has become a popular product in Okinawa Prefecture because of its more authentic flavor, which is rarely found in Japan.

JAL Agriport Co.,Ltd.

JAL Agriport Co., Ltd. was established on April 18, 2018, as an agricultural corporation of Japan Airlines. The background of its establishment lies in the fact that JAL operates many domestic flights across Japan, with more than half of them being regional routes. The primary industries in these regions are agriculture, forestry, and fisheries, and considering the current situation where the population engaged in agriculture is decreasing year by year in Japan, we aim to engage in agriculture ourselves, build a sustainable agricultural model, and spread it to revitalize agriculture and contribute to the development of local communities. Additionally, we aim to contribute to the Narita area through the promotion of the sixth industrialization of agriculture and the appeal of local ingredients.

Our main business areas are threefold.

The first is the farm business.

We opened a strawberry picking facility on February 29, 2020, where visitors can experience harvesting strawberries. Our strawberries have obtained ASIAGAP certification, which is awarded to farms that work on food safety and environmental conservation. In addition to strawberry picking, our strawberries are also provided in the in-flight meals and lounges of JAL international flights. Besides strawberries, we cultivate potatoes, blueberries, grapes, and sweet potatoes, aiming to create a farm where visitors can experience harvesting throughout the year.

The second is the restaurant business.

We opened the restaurant DINING PORT Goryokaku adjacent to the farm on March 6, 2020. We offer a menu of local production for local consumption using fruits produced at our farm and ingredients from nine cities and towns around Narita (Narita City, Tomisato City, Katori City, Sanmu City, Sakae Town, Kozaki Town, Tako Town, Shibayama Town, Yokoshibahikari Town), mainly Chiba Prefecture ingredients. We aim to promote the appeal of local ingredients, connect producers and consumers, improve the food self-sufficiency rate, and work on regional revitalization and environmental conservation.

The third is the business related to enhancing the value of agricultural products.

The first aspect of this is the development of private brand products.

The sweet potato shochu "Tsurusora" and the sweet potato chips and sticks mentioned in the materials are processed and manufactured using sweet potatoes cultivated at our farm.

The second aspect is wholesale and export.

To promote the appeal and enhance the value of domestic agricultural products to people both domestically and internationally, we provide fruits and vegetables produced by domestic farmers as in-flight meals on JAL international flights.

Furthermore, we export strawberries produced at our farm, as well as strawberries, cherries, and other fruits produced by domestic farmers, overseas.

Through these efforts, we aim to contribute to the development of Japan's future agricultural industry.

Rare type of plum “Tsuyu Akane”

Tsuyu Akane is a hybrid of Japanese plum and Japanese apricot, and was registered as a new variety in 2009. Because it is delicate and difficult to cultivate, production is low and it is not widely distributed on the market.
Furthermore, for reasons such as "it is prohibited to take seedlings out of Japan" and "it has gained attention and popularity in recent years," authentic plum wine made from 100% rare plum "Tsuyu Akane" and made only with plums, sugar, and alcohol, has become highly prized as a rare and natural additive-free product.

At Miyayoshi, we grow Tsuyu Akane on our own farm without relying on outside procurement. I'm doing it.
As a result, it is able to steadily supply customers with 100% Tsuyu Akane plum wine, which is highly rare, while maintaining its high quality.

Characteristics of “Tsuyu Akane”
■The fruit weighs approximately 40g, which is larger than traditional plums.
■The inside of the fruit turns bright red.
■Rich in functional ingredients such as polyphenols and malic acid. to health it is expected to be effective, and research is underway.
■In particular, it contains a lot of anthocyanin, a type of polyphenol, and tests have shown that the amount of anthocyanin in raw fruit is 60 times that of conventional plums.

*Anthocyanin is a type of polyphenol that contains compounds that
reduce eye fatigue and prevent heart disease.
In recent years, its bright red color and berry-like fruity aroma and taste have become popular. Since then, it has been attracting attention as a raw material for syrups, drinks, and alcoholic drinks.

Since its establishment in 1902, Seiun Sake Brewery has been brewing quality sake with the aim of creating sake loved by the local community.
The groundwater of Ogawa-machi is abundantly supplied from the surrounding mountain, and the quality of the water is said to be comparable to ""Nada no Miyamizu (Famous spring in Kansai region)."" Brewing with soft water allows the natural flavor of rice to be fully expressed. By fermenting the sake slowly at low temperatures for over three weeks, we create a sake with a vivid aroma and a refined, well-defined taste.

What is the difference between Tofu and Koya-Tofu, and what is so special about Koya-Tofu?
Koya-Tofu is one kind of tofu, however it is produced by the additional processes, such as high-pressure pressing, slow-freezing, low-temperature aging, and drying. During those processes, the characteristics of tofu change greatly in physical properties and nutrition.
One big difference is that Koya-Tofu is dry. You may feel the process is simple and easy, but drying for tofu is actually not easy.
Because the structure of tofu is too dense for water to pass through, when you try to air dry regular tofu, you can only dry the outside. What gives tofu a structure change that can be dried inside is actually freezing process.
In general, the purpose of freezing for foods is for preserving freshness and maintaining the original condition as much as possible. In such cases, flash freezing is usually used. Frozen fish is one good example for that purpose. However, freezing Koya-tofu has different purpose. We do it to improve the product and get new features such as resistant protein and porous structure. Koya-tofu is frozen at -9°C for about 3 hours which is considered an unusually slow freezing process. By doing so, we can change its characteristics. Slow freezing generally results in larger ice crystals. It puts high pressure on the tissue so the regular protein will transform to Resistant Protein. Those large ice crystals also become voids after drying, when they evaporate as water. This makes the structure firm and spongy.
In Japan, we often put Koya-Tofu in delicious soup and let it absorb the soup, so when we eat it, we enjoy the delicious taste and its chewing mouth feel.
Moreover, thanks to its dry condition, it can be stored at a room temperature for 1 year, much more sustainable than regular Tofu. For that reason, the Japanese government recommends that each family stock koya-tofu as emergency food in times of disaster.
As the product is dried and hard, Koya-Tofu has higher easiness of handling and wider range of applicable dishes. We offer Koya Tofu as an ingredient in a variety of shapes, thicknesses, and textures. For example, the form of Koya Tofu Powder can be incorporated into daily diets, such as bread, snacks or meat replacement products as a healthy ingredient or as substitute. This ingredient will typically enhance the protein content of the end products.
A component called resistant protein (RP) increase during the process. As I already mentioned, Koya-Tofu is manufactured through the processes of high-pressure pressing, slow-freezing, low-temperature aging, and drying. These processes will strengthen the binding of soy protein, helping increase the resistant protein. Therefore, Koya-Tofu contains more resistant protein than native soy protein or regular tofu. Compared to most protein in our food, resistant protein is not digested in the intestines but in the colon. It is a kind of protein based dietary fiber.
Some Clinical studies show that Koya-tofu has the effect of significantly lowering LDL cholesterol and HbA1c. These effects will lower the risk of heart disease and diabetes. We believe that the rich amount of resistant protein contained in Koya-Tofu contributes to these effects.
Since Koya-Tofu is a Japanese food, until 2019, all of clinical studies are conducted on Japanese. To prove that European consumers will have the same effect, a clinical study was conducted with 45 person in Wageningen University. We also confirmed the positive result in reducing cholesterol, HbA1c, and blood pressure.
In fact, soy protein has been reported to have many health benefits, including lowering cholesterol. Because native soy also contains resistant protein.
However, its amount of resistant protein contents is very different from Koya-tofu. As I already mentioned, the Koya-tofu manufacturing process increases the amount of RP. Koya-Tofu protein has the highest amount of resistant protein among the soy products. It is not digested in the intestines but in the colon while maintaining its size. Resistant protein binds with bile acids, and then prevent its reabosorption to the body. This leads to various health functionalities, especially LDL and Hba1c reduction.
Furthermore, a significant reduction in blood pressure was also confirmed in the clinical study. We believe this effect is brought by the rich amount of potassium that is contained in our Koya-Tofu.

Our Miedore series is made from two types of citrus fruits grown in Mie Prefecture, Japan. The first is the Meyer lemon, known for its mellow acidity and subtle sweetness. The second is the yuzu, also grown in Mie Prefecture, which has a gentle acidity and light fragrance. When poured over salad, the fragrance spreads and the unique citrus aroma blends with the crisp texture of fresh vegetables, making the salad the main dish on the table.
