Iwazo Akamine (Miyoshiya), the first toji, took over the brewery from Kichiemon Hirota (Kishiroku), a sake brewer in Notsu-cho, Oita, in 1868, and has been protecting this historic brewery for over 140 years. In the course of this tradition, Akamine's toji (master brewers) have sought to create sake that is both delicious and appreciated by customers, while keeping the basics in line with the times. Rare type of plum “Tsuyu Akane”
Tsuyu Akane is a hybrid of Japanese plum and Japanese apricot, and was registered as a new variety in 2009. Because it is delicate and difficult to cultivate, production is low and it is not widely distributed on the market.
Furthermore, for reasons such as "it is prohibited to take seedlings out of Japan" and "it has gained attention and popularity in recent years," authentic plum wine made from 100% rare plum "Tsuyu Akane" and made only with plums, sugar, and alcohol, has become highly prized as a rare and natural additive-free product.
At Miyayoshi, we grow Tsuyu Akane on our own farm without relying on outside procurement. I'm doing it.
As a result, it is able to steadily supply customers with 100% Tsuyu Akane plum wine, which is highly rare, while maintaining its high quality.

Brewing sake with the bounty of nature
Since its establishment in 1902, Seiun Sake Brewery has been brewing quality sake with the aim of creating sake loved by the local community.
The groundwater of Ogawa-machi is abundantly supplied from the surrounding mountain, and the quality of the water is said to be comparable to ""Nada no Miyamizu (Famous spring in Kansai region)."" The town is also known as ""Kanto Nada"" (Nada of the East) as one of the best brewing areas in the Kanto region. The cold winter temperatures unique to the basin nurtures Ogawa washi (traditional Japanese paper)which is ideal for ginjo brewing.
Seiun Brewery also actively purchases rice produced in Saitama Prefecture, much of which is harvested in the local surrounding area. SAWADA SYUZO CO.,LTD.

Sawada Syuzo Co.,Ltd. is a sake brewery located in Kashiba City, Nara Prefecture. Nara Prefecture is said to be the “birthplace of sake”. The reason for this is that Nara Prefecture is home to the Omiwa Shrine, which is worshipped throughout Japan as the god of sake brewing, and the “Sakadono” at Kasugataisha Shrine, the oldest existing brewing facility in the country. And because during the Muromachi period (1336-1573), Nara became a major production center for “Sobosyu”, sake brewed by temples, where the innovative technology that formed the basis of modern brewing methods was used to produce the fine sake that is the prototype for today's Sake.
Sawada Syuzo is located in the midwestern part of Nara Prefecture, in Goido, Kashiba City, overlooking Mount Miwa in the distance to the east and Mount Nijo, mentioned in the “Manyoshu” anthology, to the west. It was founded in 1830 at the end of the Edo period. Sadashiro Sawada, the first head of the family, founded a dyeing shop in the current location of Goido, and while working there, he brewed sake using rice from the surrounding rice paddies.
In the early Meiji period, Sadajyuro Sawada, the third generation head of the family, quit the dyeing business and started a full-fledged sake brewing business.
Teiji Sawada, the fourth generation head of the family, resumed sake brewing soon after the war, despite some hardships, including the death of his son, who was supposed to take over the family business, in the Pacific War, and the closure of the brewery due to rice shortages caused by food shortages.
Sadako Sawada became the fifth head of the family, replacing her brother who was killed in the war. In 1975, Sadako created the high-quality brand “Kankiko”, and in 1988, “Kankiko” won the gold medal at the National New Sake Competition.
In the Heisei era, sake brewing was suspended for a period of time due to various reasons, including the aging of production workers. However, the production system was reorganized and sake brewing resumed in 2019 after an absence of about 30 years. This has continued to the present day.
Sawada Syuzo is a small sake brewery. We are a small brewery, with a small production scale and no extensive production facilities. We also do not have skilled technicians, as we have been absent from sake brewing for some time.
What we can do is to be faithful to the basics, but not be bound by preconceived ideas, to always be ambitious, passionate, and careful in our sake brewing.
Therefore, we do all of our brewing on a small scale to ensure strict temperature control and homogeneous fermentation, without overlooking even the slightest change in the product. We also actively use locally grown rice to create a sustainable sake that allows both local agriculture and the brewery to prosper.

The sake is brewed under the name of ""TsukinoKatsura.""
