ISHIKOSHI JOZO.co.,ltd
・The only brewery in Tome City, where rolling farmland stretches out, continuing to brew sake cherished by the local community
Tome City, located in northeastern Miyagi Prefecture, is one of the prefecture's leading grain-producing areas. As the harvest of golden rice begins, migratory birds like swans and bean geese arrive, heading for the Izu and Uchi Marshes, designated as Ramsar Convention wetlands. It is a region rich in nature, where beautiful rural landscapes unfold.
In this region also known as “Water Village,” Ishikoshi Brewery—Tome City's sole sake brewery—crafts the renowned sake “Sawanoizumi.” Currently producing 1,600 koku (approx. 29,000 liters), 80% of its shipments go within the prefecture, enjoying overwhelming local support bordering on exclusivity.
In this area with a long history of rice cultivation, the brewery places strong emphasis on raw rice quality, using locally grown environmentally preserved rice. About 15 years ago, they established a “Sake Rice Research Group” with local contract farmers and have been promoting the production of sake-brewing rice varieties such as “Yamadanishiki,” “Kuranohana,” and “Kamenoo.” In recent years, they have been focusing on sustainable sake brewing, including further local sourcing of raw rice, efforts to protect water resources, which are the lifeblood of sake brewing, and the adoption of green packaging.
Traditional + Innovative Sake Brewing and a Challenging Spirit
Since its founding in 1920, the brewery has strived to brew sake using traditional Nanbu Toji methods. However, about 20 years ago, it began mechanizing its equipment and has been working to create sake that utilizes the best of both handmade and machine-made techniques. In order to meet the diverse needs of consumers, in recent years, in addition to sake, the brewery has also been producing shochu, doburoku, liqueurs, and spirits. The “Gokumari Liqueur” series, launched in 2021, features innovative packaging and a youthful sensibility. It gained popularity immediately upon release and attracted a new fan base. The total number of items now exceeds 70. While constantly researching new products suited to the times, the brewery's long-established offerings like ‘Honjozo’ and “Futsushu,” nurtured locally over the years, continue to enjoy a strong following.

Oka Naosaburo-Shoten Co.,Ltd
"Oka Naosaburo-Shoten Co.,Ltd
Oka Naosaburo-Shoten Co.,Ltd was founded in 1787 during the Edo period. For over 230 years since then, we have continued brewing using carefully selected domestic whole soybeans and wheat in traditional wooden vats. This method accounts for only 1% of soy sauce production. Guided by the brewery's natural microorganisms and the changing seasons, the moromi (fermented mash) is meticulously managed by skilled craftsmen, undergoing slow fermentation and maturation. The unique aroma and umami flavor produced by this process are unparalleled.
ARITAYA CO.,LTD.
For more than 170 years since 1832, we have been making soy sauce using the traditional natural brewing method. Soy sauce production is not something that is immediately completed by mixing ingredients with each other, as it is something that matures little by little over a long period of time through the action of microorganisms.
That is why humans do not play the leading role in soy sauce making. This is the philosophy of Aritaya."
