Kurata Foods Co., Ltd. based in Fukuyama City, Hiroshima Prefecture, has been manufacturing and selling various noodles such as ramen, soba, udon, somen, and pasta for 60 years, primarily to supermarkets and restaurants in the Chugoku and Shikoku regions. Initially, the company focused on commercial-use noodles but now sells a wide range of noodles, including local specialties like "Fukuyama Ramen," "Hiroshima Ramen," and "Hiroshima Tsukemen," through various outlets.
In 1997, to promote Fukuyama, the company created "Fukuyama Ramen." Over time, they developed over 30 products, including the Setouchi Noodle Tour series, becoming the leading local ramen producer in Western Japan.
Since 2005, we have also focused on overseas strategies, and exports that began in Hong Kong have now reached over 38 countries, and we are increasing our customer base around the world.
In 2006, we jointly invested in and established Dalian AJINOKURA Ramen Restaurant Co., Ltd., which provided noodle manufacturing support (currently 5 directly managed stores and 10 franchise stores), and are exporting frozen commercial fresh ramen all over the world, expanding the Japanese noodle and ramen business.

Based in Fukuoka, Hakusui Co., Ltd. has been producing traditional surimi (fish paste) products for over 122 years. While many fish paste products in Japan today are made using imported frozen materials, we remain committed to preserving the authentic taste and craftsmanship by sourcing fresh fish daily from local markets and processing them in-house.

Our signature surimi is made by carefully seasoning and kneading minced fresh fish using a traditional stone mill—a labor-intensive method that brings out the natural umami of the fish and creates a light, fluffy texture. This surimi is trusted by professional kitchens across Japan and used in restaurants nationwide.

Our products, including satsuma-age (fried fish cakes), seafood shumai dumplings, and fish-based mince cutlets, are featured as popular regional souvenirs at Fukuoka Airport and Hakata Station. What is the difference between Tofu and Koya-Tofu, and what is so special about Koya-Tofu?
Koya-Tofu is one kind of tofu, however it is produced by the additional processes, such as high-pressure pressing, slow-freezing, low-temperature aging, and drying. During those processes, the characteristics of tofu change greatly in physical properties and nutrition.
One big difference is that Koya-Tofu is dry. You may feel the process is simple and easy, but drying for tofu is actually not easy.
Because the structure of tofu is too dense for water to pass through, when you try to air dry regular tofu, you can only dry the outside. What gives tofu a structure change that can be dried inside is actually freezing process.
In general, the purpose of freezing for foods is for preserving freshness and maintaining the original condition as much as possible. In such cases, flash freezing is usually used. Frozen fish is one good example for that purpose. However, freezing Koya-tofu has different purpose. We do it to improve the product and get new features such as resistant protein and porous structure. Koya-tofu is frozen at -9°C for about 3 hours which is considered an unusually slow freezing process. By doing so, we can change its characteristics. Slow freezing generally results in larger ice crystals. It puts high pressure on the tissue so the regular protein will transform to Resistant Protein. Those large ice crystals also become voids after drying, when they evaporate as water. This makes the structure firm and spongy.
In Japan, we often put Koya-Tofu in delicious soup and let it absorb the soup, so when we eat it, we enjoy the delicious taste and its chewing mouth feel.
Moreover, thanks to its dry condition, it can be stored at a room temperature for 1 year, much more sustainable than regular Tofu. For that reason, the Japanese government recommends that each family stock koya-tofu as emergency food in times of disaster.
As the product is dried and hard, Koya-Tofu has higher easiness of handling and wider range of applicable dishes. We offer Koya Tofu as an ingredient in a variety of shapes, thicknesses, and textures. For example, the form of Koya Tofu Powder can be incorporated into daily diets, such as bread, snacks or meat replacement products as a healthy ingredient or as substitute. This ingredient will typically enhance the protein content of the end products.
A component called resistant protein (RP) increase during the process. As I already mentioned, Koya-Tofu is manufactured through the processes of high-pressure pressing, slow-freezing, low-temperature aging, and drying. These processes will strengthen the binding of soy protein, helping increase the resistant protein. Therefore, Koya-Tofu contains more resistant protein than native soy protein or regular tofu. Compared to most protein in our food, resistant protein is not digested in the intestines but in the colon. It is a kind of protein based dietary fiber.
Some Clinical studies show that Koya-tofu has the effect of significantly lowering LDL cholesterol and HbA1c. These effects will lower the risk of heart disease and diabetes. We believe that the rich amount of resistant protein contained in Koya-Tofu contributes to these effects.
Since Koya-Tofu is a Japanese food, until 2019, all of clinical studies are conducted on Japanese. To prove that European consumers will have the same effect, a clinical study was conducted with 45 person in Wageningen University. We also confirmed the positive result in reducing cholesterol, HbA1c, and blood pressure.
In fact, soy protein has been reported to have many health benefits, including lowering cholesterol. Because native soy also contains resistant protein.
However, its amount of resistant protein contents is very different from Koya-tofu. As I already mentioned, the Koya-tofu manufacturing process increases the amount of RP. Koya-Tofu protein has the highest amount of resistant protein among the soy products. It is not digested in the intestines but in the colon while maintaining its size. Resistant protein binds with bile acids, and then prevent its reabosorption to the body. This leads to various health functionalities, especially LDL and Hba1c reduction.
Furthermore, a significant reduction in blood pressure was also confirmed in the clinical study. We believe this effect is brought by the rich amount of potassium that is contained in our Koya-Tofu.

In order to preserve the flavor and umami of the milk, they pasteurize the raw milk at their own factory.
The production line, process, hygiene management, and production management are carried out according to the FSSC22000 standards that they have obtained.
When they produce 200 cup ice creams (90ml), they conduct bacterial tests on each one at an external inspection facility and in their own inspection, and if they find more than 300 general bacteria, they discard that production lot. (To date, they have never discarded any.)
